I requested for salmon for my birthday.
I didn’t care how it was cooked but as long as it was salmon I was happy.
As much as I claim to love all kinds of sashimi/seafood, I admit I eat it all just so I can eat salmon. The gorgeous melt-in- your-mouth texture of a piece of salmon belly or that perfectly flaky salmon is just incomparable. Without salmon, a platter of sashimi or any special meal just feels incomplete. Don’t you agree?
Since it was my last birthday before I moved out of Utah, my sister, fiance and cousin threw a special surprise dinner for me. I walked into my fiancé’s home thinking that we were meeting up to go to dinner at his aunt’s place, hence why I was wearing sweats and looking very underdressed for the occasion. But instead my family was there. There was pink, gold white balloons everywhere with confetti and of course a table with the most delicious spread. Despite all the little hints (e.g. missing pantry ingredients, an empty house to myself for hours…), I didn’t expect anything.
It was an absolutely wonderful evening filled with laughter, chatter, lots of food, balloons and pictures! We ended the night with a special zoom call with Zoe (my twin) and cut our cake together over zoom. I had an incredible blueberry chia cake that Raena made me and Zoe had our delicious summer lemon cake lemon curd (from the blog) made by her husband. It was such a special night with family.
I have to say though, my favorite part was the wonderful dinner because they made all my favorites!
We had:
- hummus (from the blog)
- roasted miso broccoli and eggplant
- roasted potatoes and japanese sweet potato
- tomato salad
- baked curry tofu (from the blog)
and this delicious Asian glazed salmon.
My fiancé, sister and cousin spent hours slaving away at the kitchen. Everything was delicious but everyone raved about the salmon. Of course, I had to ask for the recipe from my fiancé (who created this dish). Thankfully, it made it’s way here on the blog because it would be a shame NOT to share!
We’ve already had several people requesting for this recipe, so here it is! One of the easiest
- 2.5 lb salmon
- 3 tbsp kikkoman soy sauce (gluten free, if needed)
- 3 tbsp oyster sauce (gluten free, if needed)
- 3 tbsp sugar ( we used zero calorie stevia or splenda)
- 4 tbsp chopped fresh coriander (and more to taste)
- 7-8 cloves garlic, chopped
- 1" piece of gingery finely minced
- 2 tbsp water
- Preheat oven to 400F.
- Prepare salmon: Pat salmon dry.
- Spray a baking tray or cover with parchment paper.
- Lay salmon on the baking tray.
- Mix all the ingredients for the marinade together. Spread marinade over.
- Bake for 12 mins at 400F. Poke with fork to see check if it’s done. If it is still a bit red, you can bake it for slightly longer.
