So I decided to change up my usual plain ole milk, vanilla, sugar and chia for a  delish fall (but not so traditional) pumpkin spice chia pudding with pumpkin spice granola. AND let me tell you I’m so glad we made it because the combination of spiced chia pudding with the creamy yogurt, crunchy and sweet granola is just amazing.
So my lesson for you today is change isn’t bad, in fact it can beautiful and exciting. Lets all embrace this new season of life with a little more courage and little more adventures – maybe going out of our comfort zone to something a little different – or trying something new like making this chia pudding 😉
- Pudding:
- ¼ cup pumpkin puree
- ¼ cup chia seeds
- 1 cup milk of choice (dairy free if needed)
- ¼ tsp vanilla extract
- 2-3 tbsp maple syrup
- ½ tsp cinnamon
- ¼ tsp ginger
- pinch of clove
- pinch of nutmeg
- Toppings:
- ⅓ cup yogurt (dairy free if needed)
- ¼ cup granola
- cinnamon stick, optional for garnish
- Instructions: Mix all the ingredients together Taste and add more sweetness as desired.
- Stir. Let it sit for 5 mins to thicken and mix again before putting in fridge for a few hours or overnight.
- Assembly: Add in half of your chia pudding.
- Top with a few spoons of yogurt
- Sprinkle granola on top.
- End with mini cinnamon stick (optional)
