The one thing that ties us sisters together is definitely desserts – oatmeal desserts to be exact. WE love oats in all forms. Our youngest sister – Raena – especially is obsessed with making beautiful, fun desserts. She is the real genius behind this granola idea, which initially was created as part of a beautiful pumpkin granola parfait (see our last post!) – layers of chia pudding, yogurt and homemade granola for a healthy and extravagant dessert.
While this may seem like a simple recipe, it is amazing just how the spices and combination of nuts really elevates this simple oat-nut combo! As you know, most store-bought granolas are often loaded with sugar, corn syrup and vegetable oil. Not to mention they are SO EXPENSIVE! Here we’ve made a fall -inspired version thats tastes delicious but with zero oil, healthier sugar alternative all done in 10 mins! And its much more wallet-friendly! A DREAM RECIPE!
I recommend serving this with yogurt, on top of chia pudding and oatmeal, or with a bowl of milk but the possibilities are endless…I’m pretty sure this won’t last long in your pantry!!!

One pan Pumpkin Spice Granola (GF, Vegan)

Serves: 3-4
Ingredients
- 1 cup rolled oats
- ½ cup nuts, chopped (we have used walnuts, pecans and pistachios)
- ½ tsp cinnamon
- ¼ tsp ground ginger (MUST)
- ⅛ tsp nutmeg
- ⅛ tsp clove
- ¼ cup dried cranberries
- 2 tbsp maple syrup
Instructions
- Toast rolled oats in a pan until slightly fragrant and brown. Make sure you watch the pan to not burn it.
- Add nuts, spices, toast for another few minutes
- Add maple syrup and cranberries, toss till combined.
- Remove from heat and let it sit for 10 minutes to harden slightly before breaking into smaller pieces.
