Hellooo winter. I had almost forgotten what a white winter looked like if it were not for our visit to Utah this past thanksgiving and ohhh.. the beautiful white topped mountains were such a sight. While it was a warmer week, we did unfortunately end our visit in a wild snowstorm that literally put drivers and roads into an absolutely chaos and panic. One of the most beautiful sights I still cherish now is waking up to a thick layers of snow outside my sister’s balcony. The tables, chairs and park were utterly covered in a white blanket that left me in awe.
It was a beautiful touch to our Thanksgiving week with family and friends, delicious warm food and presents. While I do love how the snow looks, I am really not a fan of the cold for extended periods of time. I was sure glad to be back in Houston to 70 degree weather! Even though I personally don’t love the cold, I do however love cold treats. Whats more fun than celebrating a “frosty” winter with a “frosty” treat – frozen berry yogurt bars. Our newest creation is a delicious granola-like base topped with creamy yogurt and a sweet, fresh, tangy berry jam. This recipe can really be customized according to your liking – you can use your favorite yogurt, and favorite berry/fruit. I personally love the gorgeous, contrasting dark purple juices from the blueberries against the snowy white background of the yogurt. It really just gives the all the Christmas/ winter vibes!!!
I love that this can be healthy treat for breakfast, snack, dessert…! You can always make this a high protein treat by using greek yogurt, and add more sugar if you want make this extra decadent!!!!
What a wonderful treat for your family and friends this season!
- Granola crust:
- 1 cup quick oats
- 2½ tbsp applesauce
- 3 tbsp runny peanut butter (or nut butter of choice)
- ½ tsp vanilla extract
- 2 tbsp sugar
- 1 tsp cinnamon
- dash of salt (if peanut butter is unsalted)
- Filling:
- 1 cup yogurt (plain, unsweetened - dairy free or greek)
- 1 tsp vanilla
- 1½ -2 tbsp sugar (depending on preference)
- Berry compote:
- 4-5oz frozen berries of choice (you can use fresh)
- Few tbsp of water or more
- Other optional toppings: melted chocolate
- Mix all the crust ingredients together. It might be easier to knead with your hands. Add water if needed!
- Line a 9"x5" loaf pan with parchment paper. Pour in the granola crust mixture and press it down to fill the shape of the tin.
- Place in freezer while you prepare the rest of the layers.
- Make the berry compote: In a small pot combine the berries and a few splashes of water over low-medium heat.
- Keep stirring and applying pressure to mash the berries while it cooks. Let the mixture boil for a few minutes until it thickens. Remove from the heat and let it cool for a few minutes whilst preparing the yogurt.
- Yogurt filling: Mix together the yogurt, sugar and vanilla. Taste and adjust to sweetness (yogurt brands may differ in tanginess).
- Pour the yogurt filling on top of the crust. Add dollops of stewed berries and use a knife to swirl.
- Return to the freezer for a few hours or until set.
- Before serving, transfer the pan to the fridge to let it defrost. Cut into bars and enjoy.
- We recommend other than serving, to store the bars in the the freezer otherwise the yogurt will melt.
