As a child, summers were always the best and every time it ended I would feel a wave of emotions overcome me as school started. Now as an adult, days, weeks, seasons all blur together – the motions of getting up to go to work, doing chores and activities never changes throughout the seasons. The only thing that changes is the food I eat and what I wear. It wasn’t until I stepped out my front door for my usual evening walk, where I felt the first light breeze in a long while, that it hit that a new season was about to arrive.
Fall is here. It means its finally time to take out my fall clothes. It means more yard work. It also means luxury of walks and less bugs outside. Every seasons brings both the good and the bad – and it always means change. One of the thing that never changes for me is my love for fruits, especially mangos, and also my sweet tooth. I am always in need of a healthy sweet treat and guys… I’m super excited to share these mango chia coconut popsicles. While mangos aren’t always in season, using frozen mangos here means I get the luxury of enjoying one of my favorite parts of summer in autumn or any time of year. I love using lite coconut milk here because it gives a subtle coconut flavor, however you can also use full fat coconut milk for a creamier/richer popsicle. Chia seeds here also make this extra nutritious and pack in more fibre.
You can see we experimented with a couple different types of fruit – and mango has been my favorite, so here it is MANGO CHIA COCONUT POPSICLES – bringing a little bit of summer and sunshine to your day – any time of year!
- Coconut Base:
- ½ cup coconut milk lite (or full fat)
- ¼ cup non-dairy milk (or more coconut milk)
- 1.5 - 2 tbsp honey or sweetener or choice
- 2 tbsp chia seeds
- Mango Puree:
- 2 cups frozen mangoes
- 4 tsp honey or sweetener or choice
- 4 tbsp coconut milk lite (or full fat)
- Mix together the coconut milk, non dairy milk (if using), honey and chia seeds. Let it sit for 2-3 minutes mins, and stir again until evenly distributed. Repeat again after 2-3 mins.
- In a blender, add mangos, coconut milk and sweetener. Blend until smooth.
- In your popsicle molds, add alternate layers of coconut and mango mixture. Freeze overnight and enjoy!
