Clink clink clink. The sound rings clear as the granola spills into the bowl. Pour some almond or soy milk over and maybe some extra berries or banana – and YUM. I made sure to to snap a few pics on my iPhone before letting my fiance down the cup of granola and milk!
Spending a whole week in Vegas during lockdown was really fun. We played board games, watched dramas and movies, got takeout, took naps, made gingerbread houses, shopped…fun activities that we weren’t able to do on a normal day. This also meant that we were practically eating out every meal for 7 days. We enjoyed a plethora of Asian food – from sashimi, Chinese noodles, Korean fried chicken, ice cream, to boba. It was clear that after a couple days, we all needed something lighter to balance out all the delicious foods we were enjoying. Zoe and I baked up a tray of sweet potatoes, few jars of chia pudding and overnights oats to enjoy throughout the week for some healthy meals.
Probably one the most exciting recipes we tried out was a stovetop granola! I mean who could have thought you can make granola on vacation without an oven, a decent pan or fresh ingredients. I have been wanting to test this granola recipe for quite awhile now – sometimes inspiration hits and just leaves a deep impression! This was a quick, easy snack to feed the rest of the gang. My goal was to only cook when i absolutely needed to so that we could spend more time with each other, so this 10 minute granola was perfect. We made one batch and by the next day it was all gone.
I’m all about sweet treats/snacks, and so something crunchy/filling and nutritious is definitely welcomed here! I love this version, because you do this without an oven, it is oil-free and you can make smaller batches as you go. All you have to do is place all the dry ingredients on a pan to heat/toast, before pouring some honey at the end to bind. Its easy, sweet and versatile. It keeps well and is a great snack/breakfast. You don’t even have to prep this in advance because you can make right on the spot!

- 1 cup rolled oats (gluten-free, if needed)
- ½ cup nuts/ seeds (we used ¼ cup walnuts + ¼ cup pumpkin seeds)
- ½ tsp cinnamon
- ¼ tsp ground ginger (optional)
- Pinch of salt
- 1 - 11/2 tbsp goji berries (or any dried fruit you want, add to taste)
- 2 tbsp honey
- First prep your larger nuts by roughly chopping them into smaller chunks (you can skip this step if using seeds).
- Heat a nonstick an over medium heat. Add in your rolled oats and tossing frequently (do not step away) for a few minutes until slightly toasted and fragrant.
- Add in your chopped nuts/seeds, spices and seeds. Stir until everything is mixed through and nuts are toasted.
- Add honey. Stir until well incorporated.
- Remove from heat, add in your dried fruit.
- You can serve it right away, or let it cool and store in airtight container.

- 2 egg whites
- In a bowl, whisk egg whites until frothy.
- In a separate bowl, add in all the dry ingredients. Add in the honey and egg whites. Mix until well combined.
- Pour into an air fryer basket. Air fry at 375F for 10-12 mins or until toasted and crispy. Make sure to check your granola at 5 minus and mix it around to avoid burning.
- NOTE: each air fryer may be different so you may need more or less time.
